Sugars and Sweeteners

AGAVE NECTAR
  • 90% fructose.
  • from the blue agave plant.
  • 28% sweeter than sugar.

BLACKSTRAP MOLASSES

  • 35% sucrose, 20% glucose and fructose.
  • material that remains when sucrose is removed from sugar cane juice.
  • contains iron, calcium, zinc, copper.
  • used mostly for baking.
  • important to get unsulfured and organic

BROWN SUGAR

  • 99% sucrose, with molasses in it.

DATE SUGAR

  • made from ground dates.
  • a whole food.

HONEY

  • 77% sugar (38% fructose, 31%glucose, 1%sucrose) 17% water.
  • some minerals and some B -complex vitamins (trace amounts).

MAPLE SYRUP

  • relatively high in calcium, iron, and potassium.
  • contains more of these minerals and has fewer calories than honey.

RAPADURA

  • unrefined evaporated cane juice. High in chromium and other minerals. 82% sucrose.

SORBITOL

  • a sugar which does not trigger insulin.
  • "ol" suffix usually means the body doesn't read it as sugar.
  • can irritate and upset the stomach.
  • mostly converted to CO2 within the body.

SPLENDA

STEVIA

  • liquid or powder
  • made up of glycosides from the stevia leaf.
  • does not adversely affect blood sugar levels.

SUCANUT

  • evaporated and boiled down cane juice.
  • 90% sucrose.
  • contains more of the cane original minerals.

SUCROSE

  • ordinary table sugar.
  • made from sugar cane or sugar beets.
  • refined into a chemical with a long shelf life.
  • devoid of vitamins.

TURBINADO ("sugar in the raw")

  • 99% sucrose.
  • cane is crushed, pressed then treated to remove impurities.
  • boiled till it crystalizes to raw sugar with contaminents.
  • crystals are steamed, washed then sold.

XYLITOL

  • natural carbohydrate from birch trees, absorbed slowly.
  • contains more minerals and fewer calories than honey.
